Strawberries are certainly abundant in the summertime. However, just because there's a lot of them, doesn't mean you always have plans for them. Below are some fun ideas so that you can use up what you have and potentially enjoy this sweet fruit all-year-round.
Make Jam
As easy as it is to say that you'll come up with plenty of dessert and dinner recipes, why not clear out the majority of your stock by making jam? All you really need is sugar and fruit (and maybe a little lemon juice.) You'll be glad you have it when it comes time to dress up your toast on all the upcoming fall and winter days.
Sweeten Your Beverages
Water, soda, lemonade: they all taste better when there's a strawberry at the bottom of the glass. Try freezing your strawberries and using them instead of ice. Not only will the flavor release while keeping the drink cold, but you won't have to worry about a regular beverage being watered down. And while they might be relevant for wintertime drinks, they'll still be a welcome reminder that the season won't last forever.
Try Roasting
Roasted strawberries are great in ice cream, custards, and strudel. When you roast strawberries, you're letting the water content out and increasing the sweetness of the fruit. If you place them in a batch of frozen yogurt, they're going to stay soft rather than turn icy. This trick can preserve your strawberries for months if you keep them in the refrigerator.

Refreshing Cocktail Recipes for Summer
Cucumber Tom Collins
Tom Collins is one of those old-school cocktails that you see a lot in movies, but it is coming back with a modern twist.
Ingredients
- ¼ cup superfine sugar
- 1 ½ cup chilled gin
- 1 unpeeled cucumber
- Thin lemon slices
- Ice
- Chilled soda water
- Mint leaf garnish
- Mix together the sugar, juice, and gin in a jug or pitcher. Stir until all the sugar dissolves.
- Fill highball glasses about three-quarters of the way with ice; then add lemon and cucumber slices to the ice.
- Put a tray of ice into the gin mixture; then strain it into the glasses.
- Add a splash of soda water and mint leaves in glasses as a garnish.
Espresso Martini
Espresso martinis have been around for a while now, especially in Europe.
Ingredients
- 1⅓ parts vodka
- ⅔ part coffee liqueur
- ⅔ part espresso coffee
- Whole coffee beans for garnish
Like most martinis, it’s just a matter of pouring the ingredients into a shaker filled with ice and straining the contents into a martini glass.
Aquavit and Tonic
Straight out of Scandinavia, just a few thousand miles from Flagstaff apartments, comes a spice-and-herb-flavored spirit made from caraway and dill seeds. For those tired of the same-old, same-old, cocktails made with aquavit are becoming a big hit this year, including this simple drink.
Ingredients
- Ice
- Aquavit
- Tonic
Fill a highball glass with ice, and pour in the tonic; then splash in some aquavit. Add a garnish.

]]>Diving for Pennies
Empty out that change jar and have some sunny fun. Have everyone stand on the edge of the pool facing away from the water. Toss handfuls of change into the pool, then let everyone jump in and find the coins. The one who finds the most money wins.
Noodle Jousting
Make two teams, with two players on each team. Let each team sit on a raft and use pool noodles as jousting swords to knock each other off their rafts.
Wet T-Shirt Relay Race
Break into two teams, with each team lined up against the pool. First player on each team puts on an oversized t-shirt, then swims across the pool and back. They then have to take off the wet t-shirt and hand it off. Player two has to put on the wet shirt and swim the same laps. The team with all the players completing their laps wins.
Water Ballet Contest
Put some music out by the pool, and have each player make up a water ballet dance to one song. They can be funny, athletic or just weird, depending on the swimmer. Let the audience decide the winners.
Marco Polo
In this classic pool game, the person who is "it" closes her eyes and counts to a designated number. All the other players scatter, going wherever they want in the water. When the count is over, the player who is "it" tries to find everyone else while keeping his eyes closed. When they yell out "Marco," everyone must answer back "Polo!" The player who is caught gets to be "it" next.
